MUFFINS WITH PEAR AND CRANBERRY
- 2 cups of flour
- ¼ cup of brown sugar
- 1 tablespoon of baking powder
- 1 teaspoon of baking soda
- 1 cup Plantino Soy drink Classic or Vanila
- ¼ cup of orange juice
- 1/3 cups of dry cranberries
- ¼ cup of olive oil
- 1 cup of chopped pears
- For glaze:
- 2 cups of brown sugar
- 3-4 tablespoons of orange juice
- Pinch of salt
Preheat the oven to 200⁰C. Cover the baking sheet with baking paper.
In a deep pot, mix Plantino Soy drink, orange juice, cranberries and olive oil. In another pot, mix flour, sugar, baking powder and baking soda and add them to a mixture of Plantino soy drink and fruit. Slightly mix with a wicker and add diced pears.
Mix it all together.
Using a spoon distribute the mixture evenly on a baking sheet. Bake at 200⁰C for about 12-15 minutes.
Mix all the ingredients on a mild temperature and stir until it is thickened. Pour over hot cakes and serve.
